    • 2 tbsp jerk seasoning

    • 1 can (13.5 oz) coconut milk
    • 1 tbsp red curry paste
    • 1 tbsp soy sauce
    • 1 tbsp lime juice
    • 1 tsp minced garlic
    • 1 tsp minced ginger
    • 1/2 tsp salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, jerk seasoning, breadcrumbs, egg, green onions, and cilantro. Mix until well combined.
  3. Form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs for 20 minutes or until browned and cooked through.
  5. While the meatballs are baking, prepare the coconut curry sauce by heating a saucepan over medium heat.
  6. Add garlic and ginger to the saucepan and sauté for 1-2 minutes until fragrant.
  7. Stir in coconut milk, red curry paste, soy sauce, lime juice, and salt. Bring to a simmer and cook for 5 minutes.
  8. Once the meatballs are done, add them to the sauce and simmer for an additional 5 minutes to absorb the flavors.
