- 2 tbsp jerk seasoning

- 1 egg, beaten

- For the Coconut Curry Sauce:
- 1 can (13.5 oz) coconut milk
- 1 tbsp red curry paste
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp minced garlic
- 1 tsp minced ginger
- 1/2 tsp salt
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef, jerk seasoning, breadcrumbs, egg, green onions, and cilantro. Mix until well combined.
- Form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
- Bake the meatballs for 20 minutes or until browned and cooked through.
- While the meatballs are baking, prepare the coconut curry sauce by heating a saucepan over medium heat.
- Add garlic and ginger to the saucepan and sauté for 1-2 minutes until fragrant.
- Stir in coconut milk, red curry paste, soy sauce, lime juice, and salt. Bring to a simmer and cook for 5 minutes.
- Once the meatballs are done, add them to the sauce and simmer for an additional 5 minutes to absorb the flavors.
