- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 large eggs
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup fresh lime juice
- Zest of 2 limes
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish to prevent sticking.
- Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until all crumbs are evenly coated. Firmly press the mixture into the bottom of the prepared baking dish to form a solid crust.
- Make the filling: In another bowl, whisk together the eggs, sweetened condensed milk, fresh lime juice, and lime zest until smooth and well blended.
- Assemble: Pour the lime filling over the crust, spreading it evenly with the spatula to create a lovely layer of lime goodness.
- Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the edges turn lightly golden and the filling is set and firm to the touch.
- Cool down: Once baked, let them cool completely at room temperature before refrigerating for at least 2 hours.
- Serve: Just before serving, dust with powdered sugar.
Notes
