Delicious layered eclairs filled with chocolate and raspberry cream, perfect for any dessert occasion.
Ingredients

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 cup fresh raspberries
- 1 cup dark chocolate, chopped
- 1/2 cup milk
Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, combine water and butter, and bring to a boil.
- Stir in flour until the mixture forms a ball.
- Remove from heat and let cool slightly before adding eggs one at a time.
- Pipe the dough onto a baking sheet and bake for 25-30 minutes.
- While the eclairs cool, whip the heavy cream with powdered sugar until stiff peaks form.
- Fold in fresh raspberries into the whipped cream.
- For the chocolate ganache, heat milk and pour over chopped chocolate, stirring until smooth.
- Once eclairs are cool, slice them open and fill with raspberry cream.
- Drizzle chocolate ganache over the filled eclairs before serving.
Notes
- Make sure to let the eclairs cool completely before filling them.
- Use fresh raspberries for the best flavor.
- Store any leftovers in the refrigerator.
