Description

Delicious layered eclairs filled with chocolate and raspberry cream, perfect for any dessert occasion.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/2 cup fresh raspberries
  • 1 cup dark chocolate, chopped
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine water and butter, and bring to a boil.
  3. Stir in flour until the mixture forms a ball.
  4. Remove from heat and let cool slightly before adding eggs one at a time.
  5. Pipe the dough onto a baking sheet and bake for 25-30 minutes.
  6. While the eclairs cool, whip the heavy cream with powdered sugar until stiff peaks form.
  7. Fold in fresh raspberries into the whipped cream.
  8. For the chocolate ganache, heat milk and pour over chopped chocolate, stirring until smooth.
  9. Once eclairs are cool, slice them open and fill with raspberry cream.
  10. Drizzle chocolate ganache over the filled eclairs before serving.
