Ingredients

- 1 cup fresh blueberries
- 1 lemon, zested and juiced
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup lemon cake, cubed
- Mint leaves for garnish
Instructions
- In a mixing bowl, whip the heavy cream until soft peaks form.
- Add powdered sugar, lemon zest, lemon juice, and vanilla extract to the whipped cream and mix until well combined.
- In a trifle dish, layer half of the lemon cake cubes at the bottom.
- Add half of the lemon cream mixture over the cake layer.
- Sprinkle half of the fresh blueberries on top of the cream.
- Repeat the layers with the remaining cake, cream, and blueberries.
- Chill in the refrigerator for at least 2 hours before serving.
- Garnish with mint leaves before serving.
Notes
- For a lighter version, you can use Greek yogurt instead of heavy cream.
- Feel free to substitute the blueberries with other berries if desired.
