Ingredients

  • 1 cup fresh blueberries
  • 1 lemon, zested and juiced
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup lemon cake, cubed
  • Mint leaves for garnish

Instructions

  1. In a mixing bowl, whip the heavy cream until soft peaks form.
  2. Add powdered sugar, lemon zest, lemon juice, and vanilla extract to the whipped cream and mix until well combined.
  3. In a trifle dish, layer half of the lemon cake cubes at the bottom.
  4. Add half of the lemon cream mixture over the cake layer.
  5. Sprinkle half of the fresh blueberries on top of the cream.
  6. Repeat the layers with the remaining cake, cream, and blueberries.
  7. Chill in the refrigerator for at least 2 hours before serving.
  8. Garnish with mint leaves before serving.
