Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
- Beat in the egg, lemon zest, and lemon juice until fully combined.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add this to the wet mixture until just combined.
- Scoop tablespoons of dough onto ungreased baking sheets, spacing them 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are light golden brown. Let cool on the sheets for a few minutes.
- For the frosting, mix powdered sugar, softened butter, lemon juice, and lemon zest until smooth. Frost the cooled cookies.
Notes
Make-ahead cookie dough can be refrigerated for up to 2 days. Allow cookies to cool completely before frosting.
