- 1 packet (1.75 oz) fruit pectin
Instructions
- Prepare your jars by sterilizing them in boiling water for 10 minutes.
- In a large pot, combine the lemon juice, lemon zest, grated ginger, and red chili flakes. Bring to a simmer over medium heat.
- Add the granulated sugar to the pot, stirring until fully dissolved.
- Once the mixture is boiling, add the fruit pectin and stir continuously for 1-2 minutes until the mixture thickens.
- Test the jam’s consistency by placing a spoonful on a cold plate; it should hold its shape.
- Pour the hot jam into the prepared jars, leaving about 1/4 inch of headspace.
- Seal the jars with lids and process in a boiling water bath for 10 minutes.
- Remove jars and let them cool completely before storing in a cool, dark place.
Notes
- This jam can be made ahead and stored for up to a year if sealed properly.
- Store opened jars in the refrigerator and consume within 3 months.
- For a milder flavor, reduce the amount of chili flakes.
