Description

Lemon–Ginger Chili Sunshine Jam is a vibrant blend of sweet and spicy flavors that dance on your palate. The zesty brightness of fresh lemons is perfectly balanced by the warmth of ginger and a subtle kick from chili, creating a jam that is both refreshing and invigorating.


Ingredients

  • Fruits:
    • 4 cups fresh lemons, juiced and zested
  • Spices:
    • 1 tablespoon fresh ginger, grated
    • 1 teaspoon red chili flakes (adjust to taste)
  • Sweeteners:
    • 2 cups granulated sugar
  • Preserving Agents:
    • 1 packet (1.75 oz) fruit pectin

Instructions

  1. Prepare your jars by sterilizing them in boiling water for 10 minutes.
  2. In a large pot, combine the lemon juice, lemon zest, grated ginger, and red chili flakes. Bring to a simmer over medium heat.
  3. Add the granulated sugar to the pot, stirring until fully dissolved.
  4. Once the mixture is boiling, add the fruit pectin and stir continuously for 1-2 minutes until the mixture thickens.
  5. Test the jam’s consistency by placing a spoonful on a cold plate; it should hold its shape.
  6. Pour the hot jam into the prepared jars, leaving about 1/4 inch of headspace.
  7. Seal the jars with lids and process in a boiling water bath for 10 minutes.
  8. Remove jars and let them cool completely before storing in a cool, dark place.

Notes

  • This jam can be made ahead and stored for up to a year if sealed properly.
  • Store opened jars in the refrigerator and consume within 3 months.
  • For a milder flavor, reduce the amount of chili flakes.
