Ingredients

- 2 salmon fillets
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 lemon (juiced and zested)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the quinoa under cold water and drain.
- In a pot, combine quinoa and water or broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until liquid is absorbed.
- While quinoa cooks, preheat the oven to 400°F (200°C).
- In a small bowl, mix lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and pepper.
- Place salmon fillets on a baking sheet and brush with the lemon herb mixture.
- Bake salmon for 12-15 minutes or until cooked through and flaky.
- Fluff the cooked quinoa with a fork and divide it into bowls.
- Top quinoa with baked salmon and garnish with fresh parsley.
Notes
- For added vegetables, consider adding steamed broccoli or spinach.
- This dish can be served warm or cold.
- Leftovers can be stored in the refrigerator for up to 3 days.
