Description
A delightful dessert featuring a buttery graham cracker crust, zesty lemon filling, and fluffy meringue topping.
Ingredients
Scale
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups water
- 3 large egg yolks
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon unsalted butter
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar (for meringue)
Instructions
- Preheat the oven: Set your oven to 350°F (175°C).
- Make the crust: In a mixing bowl, combine graham cracker crumbs and melted unsalted butter. Press into a tart pan and bake for about 10 minutes, then let it cool.
- Prepare the lemon filling: In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add water and cook until thickened, about 5 minutes.
- Incorporate the egg yolks: Whisk the egg yolks and slowly mix in the thickened mixture. Return to low heat, then add lemon juice, lemon zest, and unsalted butter.
- Assemble the tart: Pour the lemon filling into the cooled crust.
- Create the meringue: Beat the egg whites with cream of tartar until soft peaks form. Gradually add sugar until glossy stiff peaks form.
- Top the tart: Spread the meringue over the lemon filling, ensuring it touches the crust.
- Bake the meringue: Bake for 10-15 minutes until lightly golden brown.
- Cool and serve: Let the tart cool before slicing and serving.
Notes
Use fresh lemons for the best flavor. Let the crust cool completely before adding the filling.
