Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the diced potatoes in salted water until tender, about 15 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Add sour cream, milk, garlic powder, salt, and pepper to the potatoes and mash until smooth.
  5. Fold in half of the cheddar cheese, bacon, and green onions.
  6. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  7. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  8. Garnish with additional green onions before serving.

Notes

  • For a vegetarian version, omit the bacon.
