Description

The Loaded Potato Taco Bowl is a delightful fusion of creamy mashed potatoes and crispy taco toppings, creating a comforting yet exciting flavor experience. Each bite offers a satisfying crunch from the tortilla chips, balanced by the rich, buttery texture of the potatoes, and a burst of freshness from the toppings.

Ingredients

Scale
  • For the Potato Base:
    • 2 pounds russet potatoes, peeled and cubed
    • 1/2 cup unsalted butter
    • 1/2 cup milk
    • Salt and pepper to taste
  • For the Taco Toppings:
    • 1 pound ground beef or turkey
    • 1 packet taco seasoning
    • 1 cup shredded cheddar cheese
    • 1 cup diced tomatoes
    • 1 cup shredded lettuce
    • 1/2 cup sour cream
    • 1/4 cup sliced jalapeños
    • 1 cup tortilla chips, crushed

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, boil the cubed potatoes in salted water for about 15-20 minutes, or until fork-tender.
  3. Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper, then mash until smooth and creamy.
  4. In a skillet over medium heat, cook the ground beef or turkey until browned, about 7-10 minutes. Drain excess fat.
  5. Add taco seasoning to the meat and follow package instructions, usually adding water and simmering for 5 minutes.
  6. In a large bowl, layer the mashed potatoes, followed by the seasoned meat, cheese, tomatoes, lettuce, sour cream, jalapeños, and crushed tortilla chips.
  7. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

  • This dish can be made ahead by preparing the mashed potatoes and taco meat separately, then assembling just before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a vegetarian option, substitute the meat with black beans or lentils.
