Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/4 cup water
  • 2 tablespoons gelatin powder
  • 1/2 cup heavy cream

Instructions

  1. In a blender, puree the diced mangoes until smooth.
  2. In a small saucepan, combine the water and gelatin, and let it sit for 5 minutes to bloom.
  3. Heat the saucepan over low heat until the gelatin dissolves completely.
  4. In a mixing bowl, combine the mango puree, coconut milk, sugar, and the dissolved gelatin. Mix well.
  5. In another bowl, whip the heavy cream until soft peaks form, then gently fold it into the mango mixture.
  6. Pour the mixture into molds and refrigerate for at least 4 hours or until set.
  7. Once set, unmold the pudding and serve chilled.

Notes

  • For a richer flavor, use ripe mangoes.
  • Adjust the sugar according to the sweetness of the mangoes.
  • Can be garnished with fresh mango slices or mint leaves.
