A delicious and creamy dessert made with fresh mangoes, perfect for a refreshing treat.
Ingredients

- 2 ripe mangoes, peeled and diced
- 1 cup coconut milk
- 1/2 cup sugar
- 1/4 cup water
- 2 tablespoons gelatin powder
- 1/2 cup heavy cream
Instructions
- In a blender, puree the diced mangoes until smooth.
- In a small saucepan, combine the water and gelatin, and let it sit for 5 minutes to bloom.
- Heat the saucepan over low heat until the gelatin dissolves completely.
- In a mixing bowl, combine the mango puree, coconut milk, sugar, and the dissolved gelatin. Mix well.
- In another bowl, whip the heavy cream until soft peaks form, then gently fold it into the mango mixture.
- Pour the mixture into molds and refrigerate for at least 4 hours or until set.
- Once set, unmold the pudding and serve chilled.
Notes
- For a richer flavor, use ripe mangoes.
- Adjust the sugar according to the sweetness of the mangoes.
- Can be garnished with fresh mango slices or mint leaves.
