Description

A delightful combination of tender chicken and perfectly roasted sweet potatoes, enhanced with a zesty maple Dijon sauce.


Ingredients

  • 2 lbs boneless, skinless chicken breasts, diced
  • 3 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups fresh spinach leaves
  • 1/4 cup chopped fresh parsley (optional, for garnish)
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil (for sauce)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the cubed sweet potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until well coated.
  3. Spread the sweet potatoes in a single layer on a lined baking sheet. Roast for approximately 25-30 minutes, turning halfway, until tender and lightly golden.
  4. While the sweet potatoes are roasting, heat a non-stick skillet over medium-high heat. Add the diced chicken, seasoning with salt and pepper. Cook for 6-8 minutes until browned and cooked through. Remove from skillet and set aside.
  5. In a small bowl, whisk together the Dijon mustard, maple syrup, apple cider vinegar, olive oil, salt, and pepper until smooth.
  6. Return the cooked chicken to the skillet, pour the maple Dijon sauce over it, and stir to coat completely. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  7. Divide the roasted sweet potatoes and chicken into serving bowls. Add a generous handful of spinach leaves to each bowl, allowing them to wilt slightly against the warm ingredients.
  8. Drizzle any remaining maple Dijon sauce over the bowls if desired and garnish with fresh parsley.

Notes

You can swap out sweet potatoes for butternut squash or parsnips. This dish is versatile for various dietary preferences.
