Maple Pecan Pumpkin Pie Bars are a delicious and festive dessert that combines the flavors of pumpkin, maple syrup, and pecans in a convenient bar form.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix together the flour, oats, brown sugar, and melted butter until crumbly.
  3. Press the mixture into the bottom of the prepared pan to form the crust.
  4. In another bowl, whisk together the pumpkin puree, eggs, granulated sugar, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
  5. Pour the pumpkin mixture over the crust in the baking pan.
  6. Sprinkle the chopped pecans evenly over the top.
  7. Bake for 30-35 minutes or until the filling is set and a toothpick comes out clean.
  8. Allow to cool before cutting into bars and serving.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • These bars can be stored in the refrigerator for up to a week.
