- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/2 cup unsalted butter, melted
- 1 cup pumpkin puree
- 2 large eggs
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, mix together the flour, oats, brown sugar, and melted butter until crumbly.
- Press the mixture into the bottom of the prepared pan to form the crust.
- In another bowl, whisk together the pumpkin puree, eggs, granulated sugar, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
- Pour the pumpkin mixture over the crust in the baking pan.
- Sprinkle the chopped pecans evenly over the top.
- Bake for 30-35 minutes or until the filling is set and a toothpick comes out clean.
- Allow to cool before cutting into bars and serving.
Notes
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- These bars can be stored in the refrigerator for up to a week.
- Serve with whipped cream for an extra treat!
