- For the Bowl:
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
Instructions
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add ground beef, cumin, smoked paprika, salt, and pepper. Cook for 8-10 minutes, breaking it apart with a spatula until browned and cooked through.
- While the beef cooks, prepare the herbed yogurt sauce by mixing Greek yogurt, parsley, mint, lemon juice, minced garlic, salt, and pepper in a bowl until well combined.
- In serving bowls, layer cooked quinoa, followed by the sautéed beef, cherry tomatoes, cucumber, red onion, and feta cheese.
- Drizzle the herbed yogurt sauce generously over the top and serve immediately.

- This dish can be made ahead by preparing the beef and yogurt sauce in advance. Store separately in airtight containers in the refrigerator for up to 3 days.
