Description
A vibrant bowl featuring succulent turkey meatballs paired with fresh cucumbers, briny Kalamata olives, and creamy tzatziki sauce over rice or pearl couscous.
Ingredients
Scale
- 1 pound ground turkey
- ½ cup Italian breadcrumbs or blanched almond flour
- ¾ cup yellow onion (chopped)
- 1 large egg
- 2 teaspoons garlic (minced)
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- Chopped cucumbers
- Kalamata olives
- Tzatziki sauce
- Fresh dill
- Lemon wedges or slices
- Cooked rice or pearl couscous
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the ground turkey, breadcrumbs (or almond flour), chopped onion, minced garlic, egg, kosher salt, and black pepper, mixing until well combined.
- Shape the mixture into meatballs about the size of golf balls.
- Place the meatballs on a lined baking sheet and bake for about 15 minutes. Broil for an additional 2-3 minutes for extra crispness.
- While the meatballs bake, prepare your rice or couscous according to the package instructions and chop your cucumbers.
- Assemble your bowl with a base of rice or couscous, topped with turkey meatballs, chopped cucumbers, and olives. Drizzle with tzatziki sauce and finish with fresh dill and a wedge of lemon.
Notes
Make the meatballs a day in advance for better flavor. For a quicker option, use an air fryer set to 375°F for 10-12 minutes.
