- 1 flatbread
- 2 eggs
- 1/4 cup feta cheese, crumbled
- 1/4 cup cherry tomatoes, halved
- 1/4 cup spinach, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Place the flatbread on a baking sheet.
- In a bowl, whisk the eggs and season with salt and pepper.
- Pour the egg mixture over the flatbread.
- Top with feta cheese, cherry tomatoes, and spinach.
- Drizzle with olive oil.
- Bake in the oven for 15-20 minutes or until the eggs are set.
- Remove from the oven and let cool for a few minutes before slicing.
