Ingredients

  • 1/4 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked quinoa, grilled chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
