    • 2 medium carrots, diced
    • 2 celery stalks, diced
    • 1 zucchini, diced
    • 1 cup green beans, trimmed and cut into 1-inch pieces
    • 1 cup spinach, chopped
  • Legumes:
    • 1 can (15 oz) cannellini beans, drained and rinsed
    • 1 can (15 oz) kidney beans, drained and rinsed
  • Pasta:
    • 1 cup small pasta (like ditalini or elbow)
  • Broth:
    • 6 cups vegetable broth
  • Herbs and Spices:
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • Salt and pepper to taste
  • Finishing Touch:
    • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  2. Add the minced garlic, carrots, and celery, cooking for an additional 5 minutes until softened.
  3. Stir in the zucchini and green beans, cooking for another 3 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat to a simmer.
  5. Add the cannellini beans, kidney beans, and pasta. Simmer for 10-12 minutes, or until the pasta is al dente.
  6. Stir in the chopped spinach, oregano, basil, salt, and pepper. Cook for an additional 2-3 minutes until the spinach is wilted.
  7. Serve hot, garnished with grated Parmesan cheese if desired.
