Scale
  • For the Donut Batter:
    • 1 cup all-purpose flour
    • 1/2 cup granulated sugar
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon nutmeg
    • 1/2 cup buttermilk
    • 1 large egg
    • 2 tablespoons unsalted butter, melted
  • For the Apple Filling:
    • 1 medium apple, peeled and diced
    • 1 tablespoon lemon juice
    • 1 tablespoon brown sugar
    • 1/2 teaspoon ground cinnamon
  • For the Glaze:
    • 1 cup powdered sugar
    • 2 tablespoons milk
    • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron to medium-high heat.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a small bowl, toss the diced apple with lemon juice, brown sugar, and cinnamon.
  6. Fold the apple mixture into the batter gently.
  7. Spray the waffle iron with non-stick cooking spray.
  8. Pour about 1/4 cup of batter onto the center of the waffle iron and close the lid. Cook for 3-4 minutes or until golden brown and crispy.
