  • 2 1/2 tsp cornstarch
  • 3/4 cup (100g) graham cracker crumbs

  • 3 tbsp (42g) butter, melted
  • 12 oz (339g) cream cheese, room temperature
  • 1/2 cup (104g) sugar (for filling)
  • 1 1/2 tbsp (12g) flour
  • 1/4 cup (58g) sour cream
  • 2 tsp lavender extract
  • 1/2 tsp vanilla extract
  • 2 large eggs, room temperature
  • Violet gel icing color, optional
  • 1/2 cup (120ml) heavy whipping cream, cold
  • 4 tbsp (29g) powdered sugar
  • 1/2 tsp vanilla extract (for whipped cream)
  • 1214 blackberries (for garnishing)

Instructions

  1. Prepare the Blackberry Topping: Puree blackberries in a food processor and strain to remove seeds.
  2. Cook the Blackberry Mixture: Combine puree, sugar, and cornstarch in a saucepan, cook until thickened.
  3. Preheat the Oven: Preheat to 325°F (162°C).
  4. Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter; press into cupcake liners and bake for 5 minutes.
  5. Prepare the Cheesecake Filling: Blend cream cheese, sugar, and flour until combined; add sour cream, lavender extract, and vanilla.
  6. Add Eggs: Mix in eggs one at a time.
  7. Fill the Cups: Distribute the batter in the prepared crusts.
  8. Bake: Bake for 18-20 minutes, let cool in the oven for 10 minutes.
  9. Cool Gradually: Open oven door for additional cooling.
  10. Top with Blackberry Sauce: Spoon cooled blackberry mixture over each cheesecake.
  11. Make Whipped Cream: Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  12. Pipe Whipped Cream: Pipe on cheesecakes and garnish with fresh blackberries.
