- 3/4 cup (100g) graham cracker crumbs
- 2 tbsp (26g) sugar (for crust)

- 12 oz (339g) cream cheese, room temperature
- 1/2 cup (104g) sugar (for filling)
- 1 1/2 tbsp (12g) flour
- 1/4 cup (58g) sour cream
- 2 tsp lavender extract
- 1/2 tsp vanilla extract
- 2 large eggs, room temperature
- Violet gel icing color, optional
- 1/2 cup (120ml) heavy whipping cream, cold
- 4 tbsp (29g) powdered sugar
- 1/2 tsp vanilla extract (for whipped cream)
- 12–14 blackberries (for garnishing)
Instructions
- Prepare the Blackberry Topping: Puree blackberries in a food processor and strain to remove seeds.
- Cook the Blackberry Mixture: Combine puree, sugar, and cornstarch in a saucepan, cook until thickened.
- Preheat the Oven: Preheat to 325°F (162°C).
- Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter; press into cupcake liners and bake for 5 minutes.
- Prepare the Cheesecake Filling: Blend cream cheese, sugar, and flour until combined; add sour cream, lavender extract, and vanilla.
- Add Eggs: Mix in eggs one at a time.
- Fill the Cups: Distribute the batter in the prepared crusts.
- Bake: Bake for 18-20 minutes, let cool in the oven for 10 minutes.
- Cool Gradually: Open oven door for additional cooling.
- Top with Blackberry Sauce: Spoon cooled blackberry mixture over each cheesecake.
- Make Whipped Cream: Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
- Pipe Whipped Cream: Pipe on cheesecakes and garnish with fresh blackberries.
