    • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, combine flour, butter, and powdered sugar until the mixture resembles coarse crumbs.
  3. Add the egg yolk and cold water, pulsing until the dough comes together.
  4. Press the dough into mini tartlet pans and chill for 15 minutes.
  5. Bake the crusts for 15-20 minutes or until golden brown. Remove and let cool.
  6. In the food processor, blend pistachios and sugar until finely ground.
  7. Add heavy cream, eggs, vanilla extract, and salt, blending until smooth.
  8. Pour the filling into the cooled tartlet shells and bake for an additional 20-25 minutes, or until the filling is set and slightly puffed.
  9. Let cool before serving. Garnish with crushed pistachios if desired.
