Delicious mini pumpkin s’mores pie cups that combine the flavors of pumpkin and chocolate in a delightful dessert.
Ingredients

- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup graham cracker crumbs
- 1/2 cup melted butter
- 1 cup mini marshmallows
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, sugar, brown sugar, vanilla extract, pumpkin pie spice, salt, and eggs until smooth.
- In another bowl, combine graham cracker crumbs and melted butter, then press the mixture into the bottom of mini pie cups.
- Pour the pumpkin mixture over the crust in each cup.
- Bake for 20-25 minutes or until set.
- Remove from the oven and top with mini marshmallows and chocolate chips.
- Broil for 1-2 minutes until marshmallows are golden brown.
- Let cool before serving.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Can be made a day in advance for convenience.
- Adjust the sweetness according to your preference.
