Delicious mini pumpkin s’mores pie cups that combine the flavors of pumpkin and chocolate in a delightful dessert.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup graham cracker crumbs
  • 1/2 cup melted butter
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, sugar, brown sugar, vanilla extract, pumpkin pie spice, salt, and eggs until smooth.
  3. In another bowl, combine graham cracker crumbs and melted butter, then press the mixture into the bottom of mini pie cups.
  4. Pour the pumpkin mixture over the crust in each cup.
  5. Bake for 20-25 minutes or until set.
  6. Remove from the oven and top with mini marshmallows and chocolate chips.
  7. Broil for 1-2 minutes until marshmallows are golden brown.
  8. Let cool before serving.

  • Store leftovers in the refrigerator for up to 3 days.
  • Can be made a day in advance for convenience.
