A delightful dessert combining mint chocolate cookies and creamy ice cream in a pie form.
Ingredients

- 1 ½ cups mint chocolate cookies, crushed
- ½ cup unsalted butter, melted
- 2 cups mint chocolate chip ice cream, softened
- 1 cup whipped cream
- ¼ cup chocolate syrup
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix crushed mint chocolate cookies with melted butter until well combined.
- Press the mixture into the bottom of a pie dish to form the crust.
- Bake the crust for 10 minutes, then let it cool.
- In a separate bowl, fold the softened mint chocolate chip ice cream with whipped cream until smooth.
- Pour the ice cream mixture into the cooled crust and spread evenly.
- Drizzle chocolate syrup on top.
- Freeze for at least 4 hours or until firm.
- Slice and serve chilled.
Notes
- For a stronger mint flavor, add a few drops of mint extract to the ice cream mixture.
- Garnish with additional whipped cream and chocolate shavings if desired.
