A delightful dessert combining mint chocolate cookies and creamy ice cream in a pie form.


Ingredients

  • 1 ½ cups mint chocolate cookies, crushed
  • ½ cup unsalted butter, melted
  • 2 cups mint chocolate chip ice cream, softened
  • 1 cup whipped cream
  • ¼ cup chocolate syrup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix crushed mint chocolate cookies with melted butter until well combined.
  3. Press the mixture into the bottom of a pie dish to form the crust.
  4. Bake the crust for 10 minutes, then let it cool.
  5. In a separate bowl, fold the softened mint chocolate chip ice cream with whipped cream until smooth.
  6. Pour the ice cream mixture into the cooled crust and spread evenly.
  7. Drizzle chocolate syrup on top.
  8. Freeze for at least 4 hours or until firm.
  9. Slice and serve chilled.

Notes

  • For a stronger mint flavor, add a few drops of mint extract to the ice cream mixture.
  • Garnish with additional whipped cream and chocolate shavings if desired.
