Ingredients

  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced mushrooms and sauté until they are soft.
  3. Add fresh spinach and cook until wilted.
  4. Sprinkle garlic powder, salt, and pepper over the mixture and stir well.
  5. Place a tortilla in the skillet, add a portion of the mushroom and spinach mixture, and top with cheese.
  6. Fold the tortilla in half and cook until golden brown on both sides.
  7. Repeat with remaining tortillas and filling.
  8. Cut into wedges and serve warm.
