- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced mushrooms and sauté until they are soft.
- Add fresh spinach and cook until wilted.
- Sprinkle garlic powder, salt, and pepper over the mixture and stir well.
- Place a tortilla in the skillet, add a portion of the mushroom and spinach mixture, and top with cheese.
- Fold the tortilla in half and cook until golden brown on both sides.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Feel free to add other vegetables like bell peppers or onions.
- Serve with salsa or sour cream for dipping.
- Can be made ahead and reheated for a quick meal.
