  • Vegetables:

    • 1 cup green beans, chopped
    • 1 cup corn, frozen or fresh
  • Liquids:
    • 8 cups beef broth
    • 1 can (14.5 oz) diced tomatoes, undrained
  • Herbs & Spices:
    • 2 tsp dried thyme
    • 1 tsp dried rosemary
    • 2 bay leaves
    • Salt and pepper to taste
  • Others:
    • 2 tbsp olive oil
    • 1 onion, chopped
    • 3 cloves garlic, minced

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the beef cubes, browning them on all sides for about 8-10 minutes.
  4. Pour in the beef broth and add the diced tomatoes, bringing the mixture to a boil.
  5. Once boiling, reduce the heat to low and add the carrots, potatoes, celery, green beans, corn, thyme, rosemary, bay leaves, salt, and pepper.
  6. Cover and simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the vegetables are cooked through.
  7. Remove the bay leaves before serving. Adjust seasoning if necessary.
