Ingredients
- Shrimp: 1 pound large shrimp, peeled and deveined
- Corn: 2 cups fresh corn kernels (or frozen)
- Vegetables: 1 medium onion, diced; 2 stalks celery, diced; 1 bell pepper, diced; 3 cloves garlic, minced
- Liquids: 4 cups seafood stock; 1 cup heavy cream
- Spices: 1 teaspoon Cajun seasoning; 1/2 teaspoon smoked paprika; salt and pepper to taste
- Herbs: 2 tablespoons fresh parsley, chopped; 1 tablespoon fresh thyme, chopped
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, celery, and bell pepper, sautéing until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the corn kernels and cook for 3-4 minutes, allowing them to caramelize slightly.
- Pour in the seafood stock and bring to a simmer. Cook for 15 minutes.
- Using an immersion blender, puree the soup until smooth, or transfer to a blender in batches.
- Return the soup to the pot, stir in the heavy cream, Cajun seasoning, smoked paprika, and season with salt and pepper. Simmer for another 5 minutes.
- Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
- Stir in the fresh herbs just before serving.
