A refreshing and easy-to-make no-bake chocolate eclair cake that is perfect for summer gatherings.

- 1 package of graham crackers
- 2 packages (3.4 oz each) of instant vanilla pudding mix
- 4 cups of milk
- 1 container (8 oz) of whipped topping
- 1 cup of chocolate frosting
- 1/4 cup of milk (for thinning the frosting)
Instructions
- In a large bowl, whisk together the instant vanilla pudding mix and milk until smooth and thickened.
- Fold in the whipped topping until well combined.
- In a 9×13 inch dish, layer graham crackers on the bottom.
- Spread half of the pudding mixture over the graham crackers.
- Add another layer of graham crackers on top of the pudding mixture.
- Spread the remaining pudding mixture over the second layer of graham crackers.
- Add a final layer of graham crackers on top.
- In a small bowl, mix the chocolate frosting with 1/4 cup of milk until smooth.
- Spread the chocolate frosting over the top layer of graham crackers.
- Cover and refrigerate for at least 4 hours or overnight before serving.
Notes
- For best results, allow the cake to chill overnight.
- You can add sliced bananas or strawberries between the layers for extra flavor.
- Make sure to use instant pudding mix, not cooked pudding.
