Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 400g cream cheese
  • 200g dark chocolate, melted
  • 100g powdered sugar
  • 1 tsp vanilla extract
  • 300ml heavy cream
  • Chocolate shavings for garnish

Instructions

  1. Crush the digestive biscuits into fine crumbs.
  2. Mix the biscuit crumbs with melted butter until well combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a bowl, beat the cream cheese until smooth.
  5. Add the melted chocolate, powdered sugar, and vanilla extract to the cream cheese and mix until well combined.
  6. In another bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the chocolate mixture until fully incorporated.
  8. Pour the cheesecake filling over the crust and smooth the top.
  9. Refrigerate for at least 4 hours or until set.
  10. Garnish with chocolate shavings before serving.
