Ingredients

  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 cup heavy whipping cream
  • Gingerbread cookies for garnish

Instructions

  1. In a bowl, combine gingerbread cookie crumbs and melted butter until well mixed.
  2. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a separate bowl, beat the cream cheese until smooth.
  4. Add powdered sugar, vanilla extract, ground ginger, ground cinnamon, and ground nutmeg to the cream cheese and mix until well combined.
  5. In another bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  7. Pour the cheesecake filling over the crust in the springform pan.
  8. Refrigerate for at least 4 hours or until set.
  9. Garnish with gingerbread cookies before serving.
