- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 (8 oz) packages cream cheese, softened
- 1 cup sour cream
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
Instructions
- In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
- Add sour cream, lemon juice, lemon zest, and vanilla extract to the cream cheese mixture. Mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the lemon mixture until fully incorporated.
- Pour the lemon cheesecake filling over the crust in the springform pan.
- Refrigerate for at least 4 hours or until set.
- Once set, remove from the springform pan and serve chilled.
Notes
- For a stronger lemon flavor, add more lemon zest.
- Can be topped with fresh berries or lemon slices for garnish.
- Store leftovers in the refrigerator for up to 3 days.
