Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup ricotta cheese
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a lined baking dish.
  2. In a large mixing bowl, beat together ricotta cheese, cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cheese mixture.
  4. Spread the cheesecake mixture over the crust in the baking dish.
  5. Refrigerate for at least 4 hours or until set.
  6. Cut into bars and serve chilled, garnished with additional lemon zest if desired.
