- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup ricotta cheese
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
Instructions
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a lined baking dish.
- In a large mixing bowl, beat together ricotta cheese, cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cheese mixture.
- Spread the cheesecake mixture over the crust in the baking dish.
- Refrigerate for at least 4 hours or until set.
- Cut into bars and serve chilled, garnished with additional lemon zest if desired.
Notes
- For a gluten-free version, use gluten-free graham crackers.
- Make sure all ingredients are at room temperature for easier mixing.
