Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh peaches, diced
  • 1 tablespoon lemon juice

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a 9×9 inch pan.
  2. In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  4. Gently fold in the diced peaches and lemon juice.
  5. Spread the peach cheesecake mixture over the crust in the pan.
  6. Refrigerate for at least 4 hours or until set.
  7. Cut into bars and serve chilled.
