A delicious and easy-to-make No-Bake Strawberry Shortcake Icebox Cake that is perfect for summer gatherings.
Ingredients

- 2 cups of fresh strawberries, sliced
- 1 cup of heavy whipping cream
- 1/2 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 1 package of graham crackers
- 1 cup of cream cheese, softened
- 1/4 cup of granulated sugar
Instructions
- In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
- In another bowl, mix the softened cream cheese and granulated sugar until smooth.
- Fold the whipped cream into the cream cheese mixture until well combined.
- In a rectangular dish, layer graham crackers, followed by a layer of the cream mixture, and then a layer of sliced strawberries.
- Repeat the layers until all ingredients are used, finishing with a layer of cream on top.
- Cover and refrigerate for at least 4 hours or overnight to set.
- Serve chilled, garnished with additional strawberries if desired.
Notes
- For best results, use fresh strawberries.
- This cake can be made a day in advance.
- Feel free to substitute strawberries with other berries if desired.
