A delicious and easy-to-make No-Bake Strawberry Shortcake Icebox Cake that is perfect for summer gatherings.


Ingredients

  • 2 cups of fresh strawberries, sliced
  • 1 cup of heavy whipping cream
  • 1/2 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 package of graham crackers
  • 1 cup of cream cheese, softened
  • 1/4 cup of granulated sugar

Instructions

  1. In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  2. In another bowl, mix the softened cream cheese and granulated sugar until smooth.
  3. Fold the whipped cream into the cream cheese mixture until well combined.
  4. In a rectangular dish, layer graham crackers, followed by a layer of the cream mixture, and then a layer of sliced strawberries.
  5. Repeat the layers until all ingredients are used, finishing with a layer of cream on top.
  6. Cover and refrigerate for at least 4 hours or overnight to set.
  7. Serve chilled, garnished with additional strawberries if desired.
