- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- For the filling:
- 1 cup chopped pecans
- 1/2 cup light corn syrup
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, softened butter, sugar, and salt to form a dough.
- Divide the dough into 24 equal portions and press each portion into the bottom and up the sides of a mini muffin tin.
- In another bowl, mix together the chopped pecans, corn syrup, brown sugar, eggs, vanilla extract, and salt until well combined.
- Pour the filling into each crust, filling them about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the filling is set and the crust is lightly golden.
- Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- These tassies can be made a day in advance and stored in an airtight container at room temperature.
- To freeze, place cooled tassies in a single layer on a baking sheet, freeze until solid, then transfer to a freezer bag for up to 3 months.
- For a twist, substitute walnuts for pecans or use maple syrup instead of corn syrup for a different flavor profile.
