  • For the crust:
    • 1 cup all-purpose flour
    • 1/2 cup unsalted butter, softened
    • 1/4 cup granulated sugar
    • 1/4 teaspoon salt
  • For the filling:
    • 1 cup chopped pecans
    • 1/2 cup light corn syrup
    • 1/2 cup brown sugar, packed
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, softened butter, sugar, and salt to form a dough.
  3. Divide the dough into 24 equal portions and press each portion into the bottom and up the sides of a mini muffin tin.
  4. In another bowl, mix together the chopped pecans, corn syrup, brown sugar, eggs, vanilla extract, and salt until well combined.
  5. Pour the filling into each crust, filling them about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes, or until the filling is set and the crust is lightly golden.
  7. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • These tassies can be made a day in advance and stored in an airtight container at room temperature.
  • To freeze, place cooled tassies in a single layer on a baking sheet, freeze until solid, then transfer to a freezer bag for up to 3 months.
