Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups mixed vegetables (bell peppers, zucchini, and cherry tomatoes)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
  3. Add the chicken breasts to the bowl and coat them well with the marinade.
  4. Place the marinated chicken on a baking sheet and surround it with mixed vegetables.
  5. Drizzle any remaining marinade over the vegetables.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
