Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the chicken thighs, olive oil, garlic, thyme, paprika, salt, and pepper. Toss until the chicken is well coated.
- Arrange the chicken thighs skin-side up on a large baking sheet.
- In the same bowl, add the halved baby potatoes and toss with any remaining seasoning. Scatter them around the chicken on the baking sheet.
- Roast in the preheated oven for 25 minutes.
- Add the broccoli and bell peppers to the baking sheet, tossing them lightly in the pan juices.
- Return to the oven and roast for an additional 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
- Let rest for 5 minutes before serving.
