Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 medium carrots, sliced
- 2 medium potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides.
- Stir in the onions and garlic, cooking until softened.
- Add the carrots, potatoes, and mushrooms to the pot.
- Mix in the tomato paste, thyme, rosemary, salt, and pepper.
- Pour in the beef broth and bring to a boil.
- Reduce heat, cover, and simmer for 1.5 to 2 hours until the beef is tender.
- Adjust seasoning if necessary and serve hot.
Notes
- For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
- This stew can be made a day ahead and tastes even better the next day.
- Feel free to add other vegetables like peas or green beans.
