Instructions
- Heat the olive oil in a large pot over medium heat until shimmering.

- Season the chicken thighs with salt, pepper, and paprika, then add to the pot, browning for 4-5 minutes on each side.
- Stir in the rice and chicken broth, bringing the mixture to a gentle boil.
- Reduce heat to low, cover, and let it simmer for approximately 20 minutes.
- In the last 5 minutes of cooking, stir in the frozen peas.
- Remove from heat and let it sit for a few minutes before serving.
