Ingredients

  • 1 cup rice
  • 2 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the diced onion and minced garlic, stirring until fragrant and translucent (about 2-3 minutes).
  3. Season the chicken thighs with salt, pepper, and paprika, then add to the pot, browning for 4-5 minutes on each side.
  4. Stir in the rice and chicken broth, bringing the mixture to a gentle boil.
  5. Reduce heat to low, cover, and let it simmer for approximately 20 minutes.
  6. In the last 5 minutes of cooking, stir in the frozen peas.
  7. Remove from heat and let it sit for a few minutes before serving.

Notes

For a variation, consider adding chopped carrots, bell peppers, or using quinoa instead of rice.
