- 1 lb Cajun sausage, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Fresh parsley for garnish
Instructions
- In a large pot, brown the sliced Cajun sausage over medium heat.
- Add the diced onion, garlic, and bell pepper, cooking until softened.
- Stir in the diced tomatoes, chicken broth, and Cajun seasoning.
- Add the penne pasta and bring to a boil.
- Reduce heat and simmer until the pasta is cooked, about 10-12 minutes.
- Stir in the heavy cream and cheese (if using) until well combined.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
