Ingredients
- Oranges: 4 large, zested and juiced
- Fresh Ginger: 2 tablespoons, finely grated
- Sugar: 3 cups
- Water: 1 cup
- Fresh Lemon Juice: 1/4 cup
- Pectin: 1 package (1.75 oz)
Instructions
- In a large pot, combine the orange juice, zest, grated ginger, and water. Bring to a boil over medium heat.
- Add the sugar and lemon juice, stirring until dissolved. Return to a rolling boil.
- Stir in the pectin and boil for an additional 5 minutes, or until the mixture thickens and reaches 220°F (104°C).
- Remove from heat and skim off any foam that forms on the surface.
- Pour the hot marmalade into sterilized jars, leaving 1/4 inch headspace. Seal immediately.
- Allow to cool at room temperature before storing in the refrigerator or pantry.
Notes
- This marmalade can be made ahead and stored in the refrigerator for up to 6 months.
- For a spicier version, increase the amount of ginger to taste.
- Substitute half of the sugar with honey for a different flavor profile.
