- 1 package Oreo cookies (about 36 cookies)
- 1/2 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- 1/2 cup mini chocolate chips (optional)
Instructions
- Preheat the oven to 325°F (160°C).
- Crush the Oreo cookies into fine crumbs and mix with melted butter.
- Press the mixture into the bottom of a greased mini muffin tin to form the crust.
- In a large bowl, beat the cream cheese, sugar, and vanilla until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream and mini chocolate chips if using.
- Pour the cheesecake mixture over the crust in the muffin tin.
- Bake for 15-20 minutes or until the centers are set.
- Allow to cool, then refrigerate for at least 2 hours before serving.

- For a firmer texture, refrigerate overnight.
