Instructions

  1. Preheat your oven to 350°F (175°C).

  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, shredded coconut, and baking powder.

  6. Spread the batter evenly in a greased 8×8 inch baking pan.
  7. Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
