Instructions
- In a large bowl, mix flour, salt, and sugar. Cut in the chilled butter until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide into two discs, wrap in plastic, and refrigerate for at least 1 hour.
- In a medium bowl, combine diced peaches, sugar, lemon juice, cornstarch, and vanilla extract. Set aside to macerate for 15 minutes.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out one disc of dough on a floured surface to about 1/8 inch thick. Cut into 5-inch circles using a cookie cutter.
- Place a tablespoon of peach filling in the center of each circle. Fold the dough over to create a half-moon shape and crimp the edges to seal.
- Brush the tops with beaten egg and sprinkle with coarse sugar.
- Bake for 20-25 minutes or until golden brown, and the filling is bubbling. Let cool slightly before serving.
