- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup pecans, chopped
- 1 cup light corn syrup
- 1/2 cup brown sugar
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Press the mixture into the bottom of a greased 9×13 inch baking dish.
- In a large bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust and spread evenly.
- In a saucepan, combine corn syrup, brown sugar, butter, and vanilla extract. Cook over medium heat until the mixture is smooth and combined.
- Stir in the chopped pecans and pour the pecan mixture over the cheesecake layer.
- Bake for 40-45 minutes or until the center is set. Let cool completely before cutting into bars.
Notes
- For a richer flavor, use dark corn syrup instead of light.
- These bars can be stored in the refrigerator for up to a week.
- Serve with whipped cream for an extra treat!
