- 1 cup pecans
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, melt the butter and brown sugar over medium heat, stirring until smooth.
- Add the pecans to the skillet and cook for 2-3 minutes until they are coated and caramelized.
- Pour the pecan mixture into a greased cake pan, spreading it evenly.
- In a mixing bowl, cream together the granulated sugar and remaining butter until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
- Pour the batter over the pecan mixture in the cake pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool for 10 minutes before inverting onto a serving plate.
Notes
- Ensure the butter is unsalted for better flavor control.
- For a richer taste, use dark brown sugar instead of light brown sugar.
- Serve warm with whipped cream or vanilla ice cream for an extra treat.
