- 8 oz penne pasta
- 1 cup silken tofu
- 1 cup canned crushed tomatoes
- 1/2 cup nutritional yeast
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions until al dente.
- In a blender, combine silken tofu, crushed tomatoes, nutritional yeast, garlic, olive oil, basil, oregano, salt, and pepper. Blend until smooth.
- In a large skillet, heat the blended sauce over medium heat until warmed through.
- Drain the pasta and add it to the skillet with the sauce. Toss to combine.
- Serve hot, garnished with fresh basil if desired.
Notes
- For a spicier sauce, add red pepper flakes to taste.
- This dish can be made gluten-free by using gluten-free penne pasta.
- Leftovers can be stored in the refrigerator for up to 3 days.
