Description

A creamy and delicious vegan pasta dish made with silken tofu and a rich rosé sauce, perfect for a comforting meal.


Ingredients

  • 8 oz penne pasta
  • 1 cup silken tofu
  • 1 cup canned crushed tomatoes
  • 1/2 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions until al dente.
  2. In a blender, combine silken tofu, crushed tomatoes, nutritional yeast, garlic, olive oil, basil, oregano, salt, and pepper. Blend until smooth.
  3. In a large skillet, heat the blended sauce over medium heat until warmed through.
  4. Drain the pasta and add it to the skillet with the sauce. Toss to combine.
  5. Serve hot, garnished with fresh basil if desired.

Notes

  • For a spicier sauce, add red pepper flakes to taste.
  • This dish can be made gluten-free by using gluten-free penne pasta.
