Ingredients

  • 1 pound fresh green beans
  • 2 cups water
  • 1 cup white vinegar
  • 1 tablespoon salt
  • 2 cloves garlic, peeled
  • 1 tablespoon dill seeds
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Wash and trim the green beans to fit into jars.
  2. In a saucepan, combine water, vinegar, and salt. Bring to a boil.
  3. Pack the green beans into sterilized jars with garlic, dill seeds, and red pepper flakes.
  4. Pour the hot brine over the beans, leaving about 1/2 inch of headspace.
  5. Seal the jars with lids and process in a boiling water bath for 5-10 minutes.
  6. Let the jars cool and store them in a cool, dark place for at least 2 weeks before consuming.
