Ingredients

  • 2 cups white vinegar

  • 1/4 cup salt
  • 1 tablespoon sugar
  • 1 teaspoon black peppercorns
  • 1 teaspoon red pepper flakes
  • 1 teaspoon mustard seeds

Instructions

  1. Wash and trim the garlic scapes, cutting them into 2-3 inch pieces.
  2. In a pot, combine vinegar, water, salt, and sugar. Bring to a boil.
  3. Add the garlic scapes to the boiling mixture and cook for 2-3 minutes.
  4. Remove from heat and add peppercorns, red pepper flakes, and mustard seeds.
  5. Pack the garlic scapes into sterilized jars and pour the hot brine over them, ensuring they are fully submerged.
  6. Seal the jars and let them cool to room temperature.
  7. Refrigerate for at least 24 hours before consuming for best flavor.
