  • Crust:
    • 1 cup all-purpose flour
    • 1/2 cup unsweetened shredded coconut
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, melted
  • Pineapple Layer:
    • 1 cup crushed pineapple, drained
    • 1/2 cup granulated sugar
    • 2 large eggs
    • 1/4 cup all-purpose flour
    • 1 teaspoon vanilla extract
  • Coconut Topping:
    • 1 cup unsweetened shredded coconut
    • 1/4 cup sweetened condensed milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the crust ingredients and press the mixture into the bottom of a greased 8×8 inch baking pan.
  3. Bake the crust for 15 minutes or until lightly golden.
  4. In another bowl, whisk together the pineapple layer ingredients until smooth.
  5. Pour the pineapple mixture over the baked crust and spread evenly.
  6. Bake for an additional 20 minutes, or until the filling is set and slightly golden on top.
  7. In a small bowl, mix the coconut topping ingredients and sprinkle over the baked bars.
  8. Bake for another 10 minutes until the topping is golden brown.
  9. Allow to cool completely before cutting into squares.
