Ingredients

🍹 For 2 Cocktails

  • 🥃 3 oz white rum – smooth base spirit

  • 🧉 2 oz coconut cream – creamy richness

  • 🍍 2 oz pineapple juice – classic tropical sweetness

  • 🍍 ½ cup caramelized pineapple chunks – for that “Pineapple Lumps” flavor

  • 🍫 1 oz chocolate liqueur (optional but divine)

  • 🍦 1 scoop vanilla ice cream (for ultra-creaminess)

  • 🧊 1½ cups crushed ice – frozen and refreshing

  • 🥄 1 tbsp sweetened condensed milk or agave (adjust for desired sweetness)

  • 🌺 Dash of vanilla extract – to mimic candy-like flavor

  • 🧂 Tiny pinch of sea salt – to balance sweetness

🧁 Garnishes (Optional but Recommended):

  • 🍫 Chocolate syrup drizzle (inside glass)

  • 🍍 Pineapple wedge or leaf

  • 🥥 Toasted coconut flakes (rim or sprinkle)

  • 🍒 Maraschino cherry

  • ✨ Edible glitter or gold flakes for flair


Instructions

Step 1: Caramelize the Pineapple 🍍

In a hot skillet, sauté fresh pineapple chunks with a bit of brown sugar and a touch of butter for 5–7 minutes until golden and slightly caramelized. Cool slightly before blending.

Step 2: Prepare the Glass

Drizzle chocolate syrup inside a chilled hurricane or highball glass. Optionally, rim the glass with toasted coconut flakes.

Step 3: Blend the Cocktail 🍹

In a blender, add:

  • Caramelized pineapple chunks

  • White rum

  • Coconut cream

  • Pineapple juice

  • Chocolate liqueur (optional)

  • Vanilla ice cream

  • Sweetener

  • Vanilla extract

  • Sea salt

  • Crushed ice

Blend until smooth and frothy.

Step 4: Taste Test & Adjust

Want it richer? Add more coconut cream or chocolate liqueur. Need more sweetness? A little condensed milk or simple syrup will do. If it’s too thick, add a splash of pineapple juice.

Step 5: Serve & Garnish

Pour into your prepared glass. Top with toasted coconut, a pineapple wedge, and a cherry. Add a little chocolate shaving or edible glitter if you’re feeling fancy.

Notes

  • Use canned coconut cream, not coconut milk or cream of coconut. The right thickness makes a huge difference in texture.

  • Don’t overblend or it may get too watery—especially if you add melted ice cream.

  • Chocolate liqueur is optional but adds a nice depth. You can also use a few drops of chocolate bitters
